Heirloom Tomatoes

Heirloom tomatoes harvested. They are super delicious!
To preserve them, I roasted them in the oven with balsamic vinegar and olive oil; some with basil, thyme, or garlic; and will use them in omelet, pasta sauce, etouffee, tomato soup, etc. We ate them fresh as well, of course.
